Noodle Salad with Shallot and Red Pepper Dressing

Sweet and tangy; this is the perfect summer salad dressing.


INGREDIENTS


INGREDIENTS FOR THE SALAD:


  • 2 nests rice vermicelli noodles, boiled and soaked in
  • warm water to soften, then drain
  • 50g broccoli, cut into small florets and steamed
  • 50g mangetout, sliced into halves
  • 50g any coloured bell peppers, cut into cubes
  • 2 tbsp peanuts, roasted and slightly crushed


INGREDIENTS FOR THE DRESSING:


  • 1 tbsp white wine vinegar or cider vinegar
  • 1 tsp rapeseed oil (takes the flavour of the Spice
  • Drops® better)
  • 1 1/2 tsp honey
  • 3 drops Garlic Spice Drops®
  • 2 drops Red Chilli Spice Drops®
  • 1/4 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 1 shallot, finely diced
  • Red chilli pepper, very finely diced

METHOD


  1. Toss the noodles and the prepared vegetables in a big bowl.
  2. For the dressing, in a small bowl add all the liquid ingredients including the salt and pepper and whisk together.
  3. Add the shallot and chilli pepper and mix and pour over the noodles.
  4. Toss the noodles once again to integrate and mix all ingredients.
  5. Add two more drops of Red Chilli Spice Drops® if you need more heat in the salad.
  6. Sprinkle the crushed peanuts and enjoy.
